These pencil cookies are seriously so easy to make for a back to school snack, and they are the cutest too! Ryan started first grade this year, and before her first day of school, we spent some time crafting these pencil cookies together. If me and a first grader can make them, so can you!
All you need for this easy back to school project is wafer cookies which you can buy at the dollar store or Walmart. You’ll want a white and pink frosting. Whether you make this or buy it in the premade piping bags from the store, that’s up to you. I like to buy the prepackaged decorating frosting to make my life easier but you could also make your own if you have a favorite frosting recipe. And then lastly, you’ll want chocolate chips. Mini chocolate chips are best for this but I had the regular size on hand.

I wasn’t aiming for perfection on these cookies, just something fun to do to celebrate the start of a new school year. They’re pretty basic. Use a knife to cut one end of the wafer cookie to look like a pencil tip and frost with white frosting. Frost the other end with pink frosting to look like an eraser. And to finish the pencil cookies, cut a chocolate chip in half and place it on the pointed end to look like pencil lead. That’s it! So easy!!
