This message has rang so true for me the last few days.
I’ve experienced major culture shock flying to Las Vegas for a few days while my husband attends a conference. I’ll be honest, I spent the first day crying.
And as I lay in bed last night, I realized my emotions, thoughts and feelings were valid. I don’t have to enjoy everything. And I live a different life than most strive for.
And that’s okay. In fact, it’s admirable. Making my own path to the beat of my own heart.

A little tour of my baking corner 🥧
Learning how to turn beauty into function. And boy does this corner function!
A few things I did -
1. Moved our laundry table out here for more counter space. All my baking is done here.
2. A cutting board and mixer permanently sets out here for easy access. No more set up time. And a cutting board always at arms reach.
3. Thrifted baskets for less than $3 a piece and nailed them into the side of the table. They hold linens, aprons and cook books.
4. Found an old drying rack to use for drying my homemade noodles and nailed this into the edge of the table as well.
5. A vintage cabinet on the wall holds all my baking supplies. From spices to vanilla to toothpicks.
6. A bench underneath the table gives my kids an opportunity to join in with baking too and a step up to the table.
Everything was thrifted for an affordable price and I shopped my home for every single piece here. Your kitchen doesn’t have to be conventional. Do what works for you.

When Ryan was in kindergarten, we were told she ma

When Ryan was in kindergarten, we were told she may have a form of ADD. She wasn’t picking up on reading and she was easily distracted in the classroom. They set up a phone call with the social worker and I was told oh but we can’t test yet. My thoughts were, if we can’t test at this age, then why are we worried? Maybe she’s just…a kid. But my mama heart always had that in the back of my mind.
So we switched schools. Thinking a smaller school may be the fit. And it was. Her reading flourished. They worked one on one with her. And she went from kindergarten reading to third grade reading in a year. Her first grade teacher said to me, Ryan doesn’t have ADD. She’s just curious. And sitting in a chair isn’t her style.
She was right. It’s not her style. Ryans style is out in the world. Communicating with people of all ages. Learning from experience. And I’ve realized I can’t put my child in a box. The same box we grew up in. Because she deserves so much more!

A system which is broken. I don’t have the answers. But I know what I can control. And that is what’s within the walls of my home ❤️
Every day is a new challenge. A new skill we have to learn. More things we have to do.
But I feel like at least I am honoring my children by giving them the life they so deserve to live.

Deli meat, but make it without the nitrates and preservatives.
Another easy switch I’ve made. And we love it so much more! You can freeze it for weeks or simply pop it in your fridge for up to a week. I usually make a few breasts at a time so I can have some extra in my freezer. Hubby loves topping his salads with it, and we also make gourmet deli sandwiches using this.
It’s super simple -
1. Start with your chicken. You can cook this frozen in your @nescoappliances digital canner/pressure cooker. I pressure cook for 11 minutes. I add in about a cup or two of chicken broth, and season heavily with @kindersflavors the blend.
2. Once your chicken is cooked, place it in the fridge overnight. It’ll make it easier to slice.
3. We have a @nescoappliances professional slicer and I am OBSESSED. You can set your width using the knob and make your chicken as thin or thick as you’d like. It also keep your fingers out of the way because I am awful with knives.
4. Place your chicken in an airtight container and place in the fridge for up to a week. Or vacuum seal and freeze for weeks.
You can also do this with ham, turkey, etc. I was just trying to get Izzy off professed deli chicken and this became an amazing alternative!

No wonder it took me 6 years to get through a 4 year degree 🤣
6 swapped majors. A few failed classes. Some angry parents.
I often wonder now if maybe I knew what I was meant for. And it wasn’t that shiny college degree.
Not to mention the absolute criminal rates on student loans 🤦🏻‍♀️ I was blessed enough to have my college paid for but I know my daughters will get a choice in what their purpose is. And it won’t be college jammed down their throats.
