If you’ve never had a Crumbl cookie, then you are missing out. I didn’t know what they were until a storefront opened up in Kalamazoo by us. The first time we tried them out, I was hooked. They have a menu that changes weekly with just a few different flavors of cookies available. My very favorite cookie has always been their birthday cake cookie. But since it’s not available all the time, I knew I had to figure out how to recreate it. Hubby also brought home Crumbl cookies after a shopping day with his friend the other day and inside that box was one birthday cake cookie. So I started my search for the perfect recipe. I ended up finding about three recipes for this particular brand of cookie, and once I settled on the ingredients mine were going to include, I realized I was forgetting an important ingredient, and one I had never used. Cake batter flavoring.
I had this delivered by Walmart in less than 2 hours but almost every single recipe included it, and I was not about to have my recipe exclude it. I imagine it’s as important as vanilla is in most recipes. You really don’t need to use much to add that cake batter flavor, so a bottle of this is going to last me a really long time. And I can think of several other recipes I’ll now be incorporating this cake batter flavoring into now!
Cookie Batter Ingredients
- 1 1/2 Cups Butter, room temperature
- 1 1/2 Cups Sugar
- 3 Eggs
- 1 1/2 tsp Cake Batter Flavor
- 4 to 4 1/2 Cups Flour
- 3 tsp Baking Powder
- Sprinkles *optional
- 8 Oz Cream Cheese, room temperature
- 1/4 Cup Butter, room temperature
- 1/2 tsp Cake Batter Flavor
- 4 Cups Powdered Sugar
- Milk, to thin
To Make Cookies
- To start cookies, cream together butter and sugar in stand mixer until combined and fluffy. I do this on a higher speed on my mixer to make sure that cream cheese gets mixed really well with the sugar.
- Mix in your 3 eggs and cake batter flavor to your butter and sugar mixture.
- Once mixed, add 4 cups flour and baking powder and mix well. If cookie batter seems too thin, add another 1/2 cup flour to thicken it up.
- If you want a funfetti type cookie batter, add in sprinkles. I probably added in about 1/4 cup of sprinkles and just mixed in my mixer until they were combined.
- Using a measuring cup, measure out 1/3 cup of the cookie batter, and form a hockey puck with your hands. Place 6 cookies on cookie sheet with parchment paper.
- Bake cookies at 350° for 14-17 minutes, until a toothpick inserted comes out clean.
To Make Frosting
While cookies are baking, mix all frosting ingredients in a stand mixer on medium speed. To thin frosting, add a tablespoon of milk at a time. You don’t need much milk, just enough to get your frosting to your desired consistency. You still want your frosting on the thick side so it doesn’t slide right off the top of your cookie. You will definitely want your cream cheese at room temperature for this step, or it will just get stuck in chunks in your mixer so set this out and aside before you even start making your cookies.
For piping the frosting, I always just take a clean drinking glass and a ziploc bag and place the ziploc back inside the drinking glass. Then I scoop the frosting inside. Pull your ziploc bag out, snip it in the corner, and you have yourself a piping bag for decorating your cookies. There really isn’t much to decorating these Crumbl copycat cookies, besides going around in a continuous circle and topping with some bright colored sprinkles.
The verdict? These are absolutely identical copycats to Crumbl cookies birthday cake cookie! And not even close to $5 a cookie like you’ll pay in store. And I definitely think this is a beginner level cookie that anyone can make too! It felt really unnatural to make the cookies as big as they are, but that’s how Crumbl makes their cookies, so I stuck with it. I’m glad I did too as the cookies cooked perfectly in about 15 minutes. I just stick a toothpick in them and if it comes out completely clean, then I know my cookies are cooked all the way through. We also like our baked goods just a tad undercooked here, but if you prefer them done, just bake them a little longer. I even moved my cookies to wire racks to cool so they wouldn’t cook anymore. You’ll know your cookies are done when they start to puff up in the oven and the tops no longer look shiny.
Crumbl Cookie Copycat Birthday Cake Cookie Recipe
- 1 Stand Mixer
- 1 1/2 cups butter
- 1 1/2 cups sugar
- 3 eggs
- 1 1/2 tsp cake batter flavor
- 3 tsp baking powder
- 4 1/2 cups flour
- 1/4 cup sprinkles
- 8 oz cream cheese
- 4 cups powdered sugar
- 1/4 cup butter
- 1/2 tsp cake batter flavor
- milk, to thin
- 1. Cream together butter and sugar in stand mixer on high until fluffy.
- 2. Add eggs and cake batter flavoring and mix until combined.
- 3. Add 4 cups flour and baking powder and mix until combined. Add 1/2 cup flour if batter seems thin.
- 4. Add sprinkles and mix until just combined.
- 5. Measure 1/3 cup of batter and form into hockey puck shaped cookie. Place on parchment paper covered cookie sheet.
- 6. Bake cookies at 350 degrees for 14-17 minutes.
- 1. In stand mixer, mix together cream cheese, butter, powdered sugar, and cake batter flavor.
- 2. Add in milk 1 tbsp at a time to thin frosting to desired consistency.
- 3. Place ziploc bag over drinking glass, spoon frosting into bag, remove bag from cup and cut corner. Pipe frosting onto cookies starting in center, in a spiral outwards. Top with brightly colored sprinkles.
